Sweet Date, Apricot, and Sage Veal Chops with Chive Potatoes

  1. Prepare as for the master recipe, #230, just swapping the fruits, adding the zest with the dates, and roasting the chops up 4 to 5 minutes longer (because of the bone and the thickness of the chop).
  2. Again, the chops should feel firm but not tough.
  3. As similar as it is, this meal tastes entirely different from the original.
  4. (What a difference a date makes!)
