Honey-Apple Cake
- 3 eggs
- 2 c. sugar
- 1 c. oil
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tsp. vanilla
- 1/2 c. honey
- 1 c. chopped nuts
- 3 c. chopped fresh apples
- 1 stick margarine
- 1 c. light brown sugar
- 1/4 c. milk
- Beat together eggs, sugar, oil and 1/4 cup honey. Combine dry ingredients and add to honey mixture.
- Mix thoroughly.
- Add vanilla, nuts and apples.
- Mix gently and pour into a lightly greased and floured 9 x 13-inch cake pan.
- Bake 45 minutes at 350u0b0.
- Combine margarine, brown sugar, milk and remaining honey in saucepan.
- Boil and cook over medium heat 2 1/2 minutes.
- Pour over cake while hot.
