Tortellini Chowder

  1. In pot over medium heat, cook bacon until crisp (6-8 mins).
  2. Drain on paper towels.
  3. To drippings in pan, add potatoes and stir-fry.
  4. Cook, stirring occasionally, until potatoes start to soften (5 mins).
  5. Stir in 1 1/2 c water, evaporated milk, 1/2 tsp salt and 1/8 tsp pepper.
  6. Bring to boil.
  7. Add tortellini, cook until tender (8-10 mins).
  8. Remove from heat, stir in scallion.
  9. Serve sprinkled with crumbled bacon.
