Pritikin-Style Fruit Loaf

  1. Preheat oven to 180C / 350F.
  2. Grease a 20-cm.
  3. / 8-inch long loaf cake tin Place all of the dried fruits in saucepan with the water.
  4. Bring to the boil, cover and simmer for 5 minutes.
  5. Remove 10 apricots from the pan and blend these to a puree with the cooking liquid and banana.
  6. Place in a large mixing bowl.
  7. Mix flour and almond meal with the fruit puree and stir in all the cooked fruits, cinnamon, and orange rind.
  8. Spoon mixture into prepared cake tin and bake in oven for about 40 minutes.
  9. Allow to cool before unmoulding onto a wire rack.
