Pritikin-Style Fruit Loaf
- 25 dried apricots
- 10 dried figs
- 10 dried prunes
- 5 dried pears, halved
- 2 cups water
- 1 lg.
- 2 sm. bananas
- 1 cup wholemeal self-raising flour
- 1/2 cup almond meal *
- 1/4 to 1/2 tsp. cinnamon
- 1 tsp. finely grated orange rind.
- Preheat oven to 180C / 350F.
- Grease a 20-cm.
- / 8-inch long loaf cake tin Place all of the dried fruits in saucepan with the water.
- Bring to the boil, cover and simmer for 5 minutes.
- Remove 10 apricots from the pan and blend these to a puree with the cooking liquid and banana.
- Place in a large mixing bowl.
- Mix flour and almond meal with the fruit puree and stir in all the cooked fruits, cinnamon, and orange rind.
- Spoon mixture into prepared cake tin and bake in oven for about 40 minutes.
- Allow to cool before unmoulding onto a wire rack.
