Salsa Recipe
- 8 c. fresh ripe tomatoes, peeled, minced, seeded
- 4 c. green bell pepper, seeded and minced
- 2 c. warm pepper (banana, jalapeno), minced and seeded
- 1-1/2 c. onion, minced
- 3 teaspoon salt (no iodine)
- 4 cloves garlic, chopped
- 2 c. cider vinegar
- Combine tomatoes, peppers, onions, garlic, vinegar and salt.
- Bring to a boil, reduce heat and simmer 20 min.
- Put on water for warm water bath at this point.
- Place jar seals in boiling water and keep hot.
- Pour salsa in warm jars, leaving 1/4 inch headspace.
- Wipe jar lip and place seal on with screw-on cap.
- Place jars in warm water bath.
- Process 30 min in soft boiling water.
- Makes 8 pints.
- Note: Can increase tomatoes to 9 c. and decrease warm pepper to 1 c. for milder salsa.
