Thai Grilled Pork Tenderloin
- 1 whole Pork Tenderloin
- 10 whole Basil Leaves
- 1 whole Lime, Juice From
- 1/2 cups Thai Peanut Dipping Sauce
- 1/2 teaspoons Salt
- Wash and pat dry pork, lightly salt.
- Tear basil leaves into big pieces.
- Marinate pork in a 1 quart bag with lime juice, peanut sauce and basil for 1-8 hours, longer is good, but an hour will do.
- Get the grill going to up to (600) degrees.
- Sear the tenderloin 1-2 min per side, turn once.
- Turn down the grill (350) degrees
- Cook pork til cooked through (will vary due to size and grill temp careful, tenderloins dry out fast).
- Halfway through, pour on remaining marinade.
- Let rest 5 min.
- Slice the pork into medallions, garnish with extra sauce, if desired.
