Wasabi Greens and Shimeji Mushroom Saute with Mayo Soy Sauce

  1. Discard the root ends of the shimeji mushrooms and shred into small clumps.
  2. Wash the wasabi greens well, drain and cut into 3 cm pieces.
  3. Combine the ingredients.
  4. Heat oil in a frying pan, and stir fry the mushrooms until wilted.
  5. Add the wasabi greens and season with salt and pepper.
  6. Stir fry quickly.
  7. Add the combined ingredients and mix.
  8. When everything is evenly distributed, turn off the heat, and it's done.
  9. Take care not to over-cook.
  10. Serve piping hot or chilled.
  11. Sprinkle some shichimi spice if you prefer.
