Blue Corn Muffins with Cranberries

  1. Preheat oven to 350F (180C).
  2. Stir together dry ingredients.
  3. In separate bowl, stir together liquid ingredients.
  4. Mix liquid and dry ingredients until just combined; batter will be lumpy.
  5. Stir in cranberries.
  6. Fill oiled muffin tin (veg.
  7. spray) about 3/4 full with batter.
  8. Bake until toothpick comes clean, about 18 to 20 min.
  9. Makes 10 muffins
