Coffee Coffee Cake

  1. Preheat oven to 350.
  2. Grease the bottom and 1/2 inch up the side of an 8x8x2 inch baking pan.
  3. In a small bowl, stir together the 1/3 cup granulated sugar, the 2 tablespoons coffee crystals, and cinnamon.
  4. For batter: In a large bowl, stir together flour, 1/2 cup granulated sugar, baking powder, baking soda, and salt.
  5. In another bowl, combine egg, yogurt, melted butter, and vanilla.
  6. Add yogurt mixture to flour mixture; stir until moistened.
  7. Spread half of the batter in prepared pan.
  8. Sprinkle with half of the coffee mixture.
  9. Repeat layers.
  10. Using a knife, swirl batter slightly.
  11. Sprinkle with walnuts.
  12. Bake about 30 minutes or until a toothpick inserted in the center comes out clean.
  13. For icing: In a small bowl, stir the 2 tsp coffee crystals into the milk until dissolved.
  14. Stir in powdered sugar until smooth.
  15. Drizzle over coffee cake.
  16. Serve warm.
