Coconut-Almond Dreams
- 13 cup brown rice syrup
- 1 cup shredded coconut, NOT sweetened
- 24 whole almonds
- 1 cup semi-sweet chocolate chips, melted
- Heat the brown rice syrup in a saucepan on medium heat.
- It will go from thick to liquidy to bubbly very fast.
- Allow it to boil for about 2 minutes.
- Pour the coconut into the syrup and stir until combined.
- Remove from stove.
- Line a 24 cup mini muffin pan with mini muffin cups.
- Put about a teaspoon of the coconut mixture in each cup and pack it down.
- Push an almond into each coconut ball.
- Pour the chocolate over each candy until you can't see the coconut anymore.
- Place in the freezer for 5 minutes until set.
- Enjoy!
