Italian Meets Greek Pita Paninis
- 1 lb chicken breast (cut into strips or chunks)
- 1 red bell pepper (diced)
- 1 zucchini (diced)
- 3 -5 ounces spinach
- 1 tomatoes (diced)
- 1 package of whole wheat wrap
- 12 cup reduced-fat feta cheese (sprinkle on top)
- 1 onion, diced
- 2 cloves of minced garlic
- 1 tablespoon olive oil
- Chicken tastes better if marinated.
- Cut chicken into strips or chunks.
- Place chicken, 1/2 of the chopped onion and 2 minced cloves of garlic in pan and saute on medium/high heat until the pink is gone in the middle.
- Meanwhile, chop your veggies and place all of them into another pan to saute.
- Pour 1 tablespoon of olive oil in with veggies.
- Cook on medium heat until tender.
- Add Salt and pepper to taste.
- Then combine chicken and veggies and top with about 1 ounce of low-fat feta on to the wrap or pita bread.
- Grill in the Panini griller until "closed".
- FEAST.
