Radish and Cheese Salad
- 6 ounces radishes
- 1 large or 2 small green onions
- 1/4 cup coarsely grated, well-packed sharp cheese
- 2 tablespoons olive oil
- 1 tablespoon plus 1 teaspoon white or red wine vinegar
- 1/2 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
- Trim radishes and slice.
- Slice green onion thin.
- Grate cheese.
- Beat oil with vinegar and mustard and mix with radishes and onions.
- Season.
- Sprinkle cheese on top.
