Ground Beef Chili
- 1 lb ground beef
- 1 large onion, chopped
- 1 yellow or orange bell pepper, chopped
- 2 tbsp plus 2 teaspoons chili powder
- 1 large clove garlic, minced
- 1 jalapeAao pepper, seeded and chopped
- 1 can (28 ounces) diced tomatoes undrained
- 1 can (8 ounces) tomato sauce
- 1/2 tsp ground cumin
- 1/2 tsp dried marjoram
- 1/4 tsp dried thyme
- 1 can (15 ounces) light or dark kidney beans (drained and rinsed)
- Cook first 2 ingredients in a large skillet until meat is browned and onions have softened.
- Drain off excess fat.
- Add cooked beef, onions and the rest of the ingredients to a stock pot, mix well; bring to a boil.
- Cover and reduce heat and simmer, stirring occasionally for one and a half to two hours.
