Banana Pudding Napoleon Recipe

  1. For the Pudding: In a small bowl, whisk together 1/2 c. of the lowfat milk, 1/3 c. sugar, Large eggs, egg yolk and cornstarch.
  2. In a medium saucepan, bring remaining 2 c. lowfat milk and 3 Tbsp.
  3. sugar almost to a boil.
  4. Whisk in other ingredients.
  5. Bring to a low boil.
  6. Whisk constantly till thickened and smooth, about 2 min.
  7. Remove pan from heat.
  8. Strain custard and whisk in vanilla.
  9. Place 2 bananas in food processor and pulse till cut into small pcs.
  10. Fold this into custard and chill.
  11. For the Napoleon Layers: Preheat oven to 350 degrees.
  12. Whisk egg whites with sugar.
  13. Stir in melted butter and vanilla extract.
  14. Mix in flour.
  15. On a parchment lined sheet pan, spread 1 Tbsp.
  16. of mix thinly into a 4-inch diameter circle (like a thin cookie).
  17. Repeat till there is no more batter.
  18. Bake in the oven till light brown, about 5 min.
  19. For each serving, use 3 "cookies".
  20. Slice thin remaining bananas on bias.
  21. On each plate, place 1 cookie, followed by 2 slices of bananas, 1 1/2 Tbsp.
  22. of banana custard.
  23. Repeat and then top with remaining cookie.
  24. Garnish with powdered sugar and mint leaves.
  25. This recipe yields 4 servings.
