Chicken Or Meat Stew Italian Recipe
- 2 lbs. meat cut into sm. cubes or possibly 1 chicken, cut up
- 2 tbsp. extra virgin olive oil or possibly Crisco
- 3 tbsp. butter
- 1/4 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, chopped
- 1 med. onion, minced
- 1 teaspoon sweet basil
- Healthy pinch oregano
- 1/2 teaspoon grnd black pepper
- 1 healthy pinch rosemary leaves
- 1 sm. bay leaf
- 1/4 c. marsola or possibly any white wine
- 1 c. chicken broth
- In oil and butter, brown meat cubes or possibly chicken pcs, slowly, on all sides.
- Add in onions, garlic and all spices.
- Cook slowly till onion and garlic are limp and very lightly browned.
- Add in chicken broth and wine, a little at a time and continue to stew at low temperature till meat or possibly chicken is tender and lightly browned.
- Add in more broth as needed to keep moist.
- Sprinkle with fresh minced parsley and serve.
