The Best Seafood Potpies
- 2 sheets refrigerated pie pastry
- 2 (6 ounce) cans crabmeat, drained, flaked and cartlidge removed
- 2 (4 1/4 ounce) cans baby shrimp, rinsed and drained
- 1 cup chopped celery
- 1 cup mayonnaise
- 12 cup chopped green pepper
- 2 tablespoons lemon juice
- 3 teaspoons chopped onions
- 12 teaspoon seafood seasoning
- 12 cup shredded cheddar cheese
- On a lightly floured surface, roll out pastryto 1/8 inch thickness.
- Cut out four 7 inch circles (discard the scrap).
- Press pastry circles onto the bottom and up the sides of 4 ungreased 10 ounce custard cups.
- Place on a baking sheet, and bake at 425 degrees for 7-10 minutes or until golden brown.
- Reduce heat to 375 degrees.
- Combine the crab, shrimp,celery, mayonnaise, green pepper, lemon juice, onion, and seafood seasonings.
- Spoon into hot shells, and sprinkle with cheese.
- Bake for 20-25 minutes or until bubbly and cheese is melted.
