Oil-Free and Easy Okara Banana Muffins
- 100 grams Banana
- 1 tbsp Rum
- 100 grams Fresh okara
- 2 Eggs
- 60 to 70 grams Sugar
- 100 grams Cake flour
- 4 grams Baking powder
- 2 grams Baking soda
- 1 Chocolate bar or chocolate chips
- Mash the banana, add the rum, and mix.
- Combine the egg and sugar, add the banana and okara, and mix well.
- Preheat oven to 170C.
- Put the ingredients in a bowl, whisk well, then add the wet ingredients from Step 1, and mix until even.
- Mix in chocolate chips, if desired.
- Pour into molds, bake for 25 minutes, then they're done.
