Oil-Free and Easy Okara Banana Muffins

  1. Mash the banana, add the rum, and mix.
  2. Combine the egg and sugar, add the banana and okara, and mix well.
  3. Preheat oven to 170C.
  4. Put the ingredients in a bowl, whisk well, then add the wet ingredients from Step 1, and mix until even.
  5. Mix in chocolate chips, if desired.
  6. Pour into molds, bake for 25 minutes, then they're done.
