Beef Vintner
- 2 lbs top round steaks, cubed
- 3 tablespoons oil
- 1 12 teaspoons salt
- 1 teaspoon cracked pepper
- 3 medium onions
- 1 garlic clove, crushed
- 12 teaspoon dried basil
- 12 grated lemon, rind of
- 1 teaspoon paprika
- 1 12 tablespoons flour
- 1 cup dry red wine
- 1 cup beef broth
- 12 lb raw mushrooms
- chopped parsley
- 4 carrots
- 4 small potatoes
- Brown beef lightly in oil.
- Add salt, onions, garlic, basil, lemon peel, and paprika.
- Cover and simmer for 30 minutes.
- Sprinkle flour over beef and mix well.
- Add wine, beef stock, carrots, and simmer for 1 hour.
- Add mushrooms and simmer 15 minutes longer or until beef is tender.
- Garnish with chopped parsley.
