Three Vegetable Latkes Recipe

  1. In a bowl combine Large eggs, shredded vegetables, parsley, salt, and pepper.
  2. Stir in matzoh meal.
  3. Shape into flat cakes, using 1 to 2 Tbsp.
  4. mix for each.
  5. Fry in 1 to 2 Tbsp.
  6. of warm oil till brown.
  7. Drain on paper toweling.
  8. Makes 24 to 35 latkes.
