Three Vegetable Latkes Recipe
- 3 Large eggs
- 2 1/2 c. shredded zucchini (2 med.)
- 1 c. shredded, peeled potatoes (2 med.)
- 1 c. shredded carrots (2 med.)
- 1/2 c. onion, shredded (1 lg.)
- 1/4 to 1/2 c. parsley
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 c. matzoh meal
- Vegetable oil for frying
- In a bowl combine Large eggs, shredded vegetables, parsley, salt, and pepper.
- Stir in matzoh meal.
- Shape into flat cakes, using 1 to 2 Tbsp.
- mix for each.
- Fry in 1 to 2 Tbsp.
- of warm oil till brown.
- Drain on paper toweling.
- Makes 24 to 35 latkes.
