Aubergine Caviar Recipe

  1. Preheat oven to 350 degrees.
  2. Bake whole aubergines for 1 hour or possibly till tender, turning them occasionally.
  3. Peel off dark skin; mince the pulp.
  4. Stir in all remaining ingredients; mix well.
  5. Refrigeratein covered bowl for several hrs before using.
  6. Serve on crisp lettuce as a first course or possibly mound on melba toast as an hors d'oeuvre.
  7. This recipe yields 6 servings.
