Aubergine Caviar Recipe
- 2 med aubergines - (3/4 lb ea)
- 1/2 c. finely-minced onion
- 3 x garlic cloves chopped
- 1 Tbsp. fresh lemon juice
- 2 Tbsp. extra virgin olive oil
- 1/2 c. minced fresh parsley
- 1 tsp salt
- 3/4 tsp coarsely-grnd black pepper
- Preheat oven to 350 degrees.
- Bake whole aubergines for 1 hour or possibly till tender, turning them occasionally.
- Peel off dark skin; mince the pulp.
- Stir in all remaining ingredients; mix well.
- Refrigeratein covered bowl for several hrs before using.
- Serve on crisp lettuce as a first course or possibly mound on melba toast as an hors d'oeuvre.
- This recipe yields 6 servings.
