Chicken Mayonnaise Loaf Recipe
- 4 c. cooked chicken, minced
- 3/4 c. French dressing
- 3 env. unflavored gelatin
- 2 1/2 c. chicken broth
- 1 1/4 c. celery, minced
- 3/4 c. pecans, minced
- 1 1/2 c. mayonnaise
- 2 tbsp. onion, grated
- 3/4 teaspoon curry pwdr
- 1 teaspoon salt
- Combine chicken and French dressing; toss gently.
- Chill.
- Soften gelatin in 3/4 c. of chicken broth.
- Heat remaining broth to the boiling point.
- Add in softened gelatin; stir till dissolved.
- Cold gelatin mix till syrupy.
- Add in celery and pecans to the chicken mix.
- Mix mayonnaise, onion, curry pwdr and salt; stir in gelatin.
- Combine with the chicken mix.
- Pour into loaf pan greased with mayonnaise.
- Refrigeratetill hard.
- Unmold and garnish with salad greens, cucumber slices or possibly radishes if you like.
- Yield: 8-10 servings.
