Crunchy Ice Cream Pie Recipe
- 2/3 c. brown sugar
- 1/3 c. butter
- 2 c. cornflakes
- 1/2 c. nuts, minced
- 1/2 c. flaked coconut
- 1 quart. vanilla ice cream, softened
- Measure sugar and butter into mixing bowl; beat till light and fluffy.
- Add in cornflakes, nuts and coconut.
- Mix till combined.
- Reserve 1/4 c. cornflakes mix for topping.
- Press remaining mix proportionately and firmly in bottom and around sides of 9-inch pie pan to create crust.
- Chill.
- Spread ice cream proportionately in crust.
- Sprinkle with reserved cornflakes.
- Freeze till hard, about 3 hrs or possibly overnight.
- Cut into wedges.
- Garnish with berries or possibly fruit, if you like.
