Crunchy Ice Cream Pie Recipe

  1. Measure sugar and butter into mixing bowl; beat till light and fluffy.
  2. Add in cornflakes, nuts and coconut.
  3. Mix till combined.
  4. Reserve 1/4 c. cornflakes mix for topping.
  5. Press remaining mix proportionately and firmly in bottom and around sides of 9-inch pie pan to create crust.
  6. Chill.
  7. Spread ice cream proportionately in crust.
  8. Sprinkle with reserved cornflakes.
  9. Freeze till hard, about 3 hrs or possibly overnight.
  10. Cut into wedges.
  11. Garnish with berries or possibly fruit, if you like.
