Tofu Coconut Curry

  1. In a skillet, mix coconut milk, 3 T soy sauce, brown sugar, curry powder, ginger and chili flakes.
  2. Bring to a boil.
  3. Stir in veggies and tofu.
  4. Cook for 5 minutes.
  5. Add basil and bok choy.
  6. Season with salt and remaining soy sauce.
  7. Serve over plain jasmine or basmati rice.
