Peach Pie

  1. Preheat oven to 400F.
  2. Mix peaches, sugar, tapioca and lemon juice.
  3. Let stand 15 minutes.
  4. Place 1 of the pie crusts in 9-inch pie plate.
  5. Fill with fruit mixture; dot with butter.
  6. Cover with remaining pie crust; seal and flute edge.
  7. Cut several slits in top crust to allow steam to escape.
  8. Bake 45 to 50 minutes or until juices form bubbles that burst slowly.
  9. Cool.
