Roasted Sweet Pepper and Mozzarella Crostini
- 6 slices bread, french baguette 1/2-inch-thick
- 1 1/2 tablespoons olive oil, extra-virgin
- 1/2 cup sweet red bell peppers, roasted slice into strips, or more as needed
- 13 cup smoked mozzarella cheese shredded, or more as needed
- Preheat the oven to 375F (190C).
- Place the bread slices on a baking sheet.
- Brush bread slices with olive oil.
- Bake until pale golden and crisp, about 12 to 15 minutes.
- Top the bread with the bell pepper strips.
- Sprinkle cheese on top.
- Broil until the cheese melts, 1 to 2 minutes.
