Maple-Pecan Muffins
- 2 cups maple-pecan whole grain cereal flakes, divided
- 3/4 cup milk
- 1 cup chunky applesauce
- 1/4 cup (1/2 stick) butter or margarine, melted
- 1 egg
- 1/2 cup granulated sugar
- 1-1/2 cups flour
- 1 Tbsp. CALUMET Baking Powder
- 2 to 3 tsp. water, divided
- 1/2 cup powdered sugar
- Preheat oven to 400F.
- Mix 1-1/2 cups of the cereal, milk, applesauce and butter in medium bowl; let stand 5 minutes.
- Add egg and granulated sugar; mix well.
- Stir in flour and baking powder just until blended.
- Spoon evenly into 12 greased or paper-lined medium muffin cups, filling each cup 2/3 full.
- Lightly crush remaining 1/2 cup cereal.
- Sprinkle evenly over batter; press lightly into batter.
- Bake 18 to 20 minutes or until toothpick inserted in centers comes out clean.
- Cool slightly.
- Stir 2 tsp.
- of the water into powdered sugar until well blended.
- Add remaining 1 tsp.
- water if necessary for desired drizzling consistency.
- Dizzle over muffins.
- Let stand until set.
