Easy Peanut Butter-Coconut Truffles
- 3 Tbsp. powdered sugar
- 3/4 cup BAKER'S ANGEL FLAKE Coconut, divided
- 1 cup pitted dates
- 1/2 cup PLANTERS Dry Roasted Peanuts
- 1/2 cup raisins
- 1/2 cup dried cherries
- 1 Tbsp. unsweetened cocoa powder
- 1/4 tsp. Chinese five-spice powder
- 1/4 cup creamy peanut butter
- Process sugar and 1/2 cup coconut in food processor until coconut is finely chopped.
- Place mixture in shallow dish; set aside.
- Place dates, nuts, raisins, cherries, cocoa powder, five-spice powder and remaining coconut in food processor.
- Use pulsing action to process until finely chopped, stopping to scrape down sides as necessary.
- Add peanut butter; process until mixture can form a ball.
- Shape mixture into 28 (about 1-inch) balls.
- Roll balls in coconut mixture, gently patting mixture onto sides of balls.
