Broccoli Rice Casserole Recipe
- 6 tbsp. flour
- 1 teaspoon salt
- Healthy pinch of pepper
- 6 tbsp. butter
- 3 c. lowfat milk
- 2 c. grated Cheddar cheese
- 1 can Cheddar cheese soup
- 1 c. mayonnaise
- 2 1/2 c. cooked instant rice
- Heat butter in sauce pan on high heat.
- Add in flour, salt and pepper.
- Stir in lowfat milk.
- Reduce heat to medium and stir till sauce starts to thicken.
- Turn to off and stir till thick.
- Add in Cheddar cheese.
- Stir in 1 can Cheddar cheese soup and 1 c. mayonnaise.
- Cook broccoli for about 5 min and add in to cheese sauce.
- Stir in cooked instant rice (about 2 1/2 c.) put in large casserole dish and bake at 350 degrees for about 1 hour.
