Xochipilli's Mezcal Smash
- 2 (1 inch) pineapple chunks
- 1 12 tablespoons cinnamon simple syrup (make syrup then infuse with cinnamon)
- 14 cup mezcal
- cinnamon stick (garnish)
- With a muddler or the handle of a wooden spoon, mash pineapple and cinnamon simple syrup in a 16 oz mixing glass or cocktail shaker 4-5 times just to release juices and oils.
- Add mezcal.
- Strain into an Old Fashioned glass and fill halfway with crushed ice.
- Stir, then mound more crushed ice on top.
