Lamb Shish-Kebab (Souvlakia)

  1. Combine all ingredients; add meat and let marinate in refrigerator 3 to 6 hours, turning meat over several times.
  2. Put meat through oiled skewers and set to grill over charcoal, turning to brown evenly.
  3. If a home oven is used, rest the skewers on rack of broiler pan, and brown under broiler, about 6 inches below heat.
  4. Turn occasionally to maintain even color and baste with marinating sauce.
  5. Broil until meat is brown and crispy, about 45 minutes.
  6. (At Good Housekeeping kitchens, we broiled the lamb only 10 to 15 minutes for medium-done, turning the skewers once; it was delicious.
  7. If you are using pork, make sure to cook through.)
