Lamb Shish-Kebab (Souvlakia)
- 1/4 c. salad oil
- 1/4 c. Wine vinegar
- 1/4 c. lemon juice
- 1 clove garlic
- 4 tsp. salt
- 1/4 tsp. Pepper
- 1 tsp. dried oregano leaves
- 4 lb. boned leg of lamb or pork, or beef sirloin
- Combine all ingredients; add meat and let marinate in refrigerator 3 to 6 hours, turning meat over several times.
- Put meat through oiled skewers and set to grill over charcoal, turning to brown evenly.
- If a home oven is used, rest the skewers on rack of broiler pan, and brown under broiler, about 6 inches below heat.
- Turn occasionally to maintain even color and baste with marinating sauce.
- Broil until meat is brown and crispy, about 45 minutes.
- (At Good Housekeeping kitchens, we broiled the lamb only 10 to 15 minutes for medium-done, turning the skewers once; it was delicious.
- If you are using pork, make sure to cook through.)
