Spicy Queso Fresco Guacamole

  1. Cut the avocados in half lengthwise.
  2. Remove the pit from the avocado and discard.
  3. Remove the avocado from the skin, and place the avocado flesh on a cutting board.
  4. Cut the avocado in 1/2-inch cubes and transfer the avocado to a medium-sized bowl.
  5. Add the jalapeno pepper, fresh lime juice and crumbled queso fresco to the bowl.
  6. Mash everything together with a fork until half chunky and half creamy.
  7. Season with salt and pepper to taste and serve immediately.
