Mediterranian Monkfish
- 500 Grams Monkfish
- 500 Grams Cherry Tomatoes
- 1 White Onion
- 100 Grams Basil
- 1/2 Red Pepper
- 1/2 Green Pepper
- 1 Large Lemon
- 100 ml Olive Oil
- 1 Small Ciabatta
- Prepare all ingredients and separate for ease when cooking.
- Tomatoes: de-seed (cut in Half And Scoop Out) Basil: Roughly Chop (Hold Back Some Pretty Leaves For Garnish) Lemon: Juice Fish: Cut Into Large Chunks Peppers: Batons Onions: Quatered, Sliced Ciabatta: Half (Legnthways)
- Add 1/4 Of Your Oil To A Frying Pan And Toss Peppers, Onion And Fish Until The Onions Just Start To Change Colour.
- Throw In All Of The Ingredients (But The Bread) And Toss Regulary Until The Fish Is Tender.
- Lightly Toast The Bread And Place It Centre Of The Plate, Cover 3/4s With Monkfish.
