Israeli Couscous with Red Pepper Sauce

  1. Cook the couscous with the water according to the package directions and set aside.
  2. In a food processor combine the roasted red bell peppers, garlic, salt, pepper, olive oil and vinegar/lemon juice.
  3. Blend until everything is broken up and the sauce is consistent.
  4. Pour the sauce over the freshly made couscous.
  5. Serve with avocado.
