Israeli Couscous with Red Pepper Sauce
- 1 cup Israeli Couscous
- 1- 1/4 cup Water
- 3 whole Roasted Red Peppers
- 2 cloves Garlic, Peeled
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 Tablespoons Olive Oil
- 1 Tablespoon Sherry Vinegar
- 1 whole Avocado
- Cook the couscous with the water according to the package directions and set aside.
- In a food processor combine the roasted red bell peppers, garlic, salt, pepper, olive oil and vinegar/lemon juice.
- Blend until everything is broken up and the sauce is consistent.
- Pour the sauce over the freshly made couscous.
- Serve with avocado.
