Shrimp Fettucine
- 3 sticks butter
- 2 medium onions
- 3 ribs celery
- 2 bell peppers, chopped
- 1/4 c. flour
- 4 Tbsp. parsley, chopped
- 3 lb. shrimp, peeled and deveined
- salt and pepper
- 1 (8 oz.) sour cream
- 1 qt. half and half
- 1 lb. Velveeta cheese, cubed
- 2 Tbsp. jalapeno peppers, chopped (optional)
- 3 cloves garlic, crushed
- 1 lb. pkg. fettucine noodles
- 1/2 c. chopped shallots
- Parmesan cheese
- Melt butter in large heavy saucepan.
- Add onions, shallots, celery and bell pepper.
- Cook 10 minutes until clear.
- Add flour; blend well.
- Cover and cook 15 minutes.
- Stir occasionally.
- Add parsley and shrimp.
- Cover and cook 20 minutes, stirring often. Add cream, cheese, jalapenos and garlic.
- Mix well.
- Add salt and pepper to taste.
- Cover and cook on low 20 minutes.
- Stir occasionally.
- Cook noodles according to package directions. Drain.
- Add sauce.
- Mix thoroughly. Pour into 6-quart buttered casserole dish.
- Sprinkle with Parmesan cheese.
- Bake at 350u0b0 for 12 minutes.
