Avocado Bean Dip
- 1 can (15 Oz. Size) Cannelini Beans, Drained, Rinsed
- 1 Small Avocado, Seeded, Peeled, Chopped
- 3 Tablespoons Lemon Juice
- 1/2 cups Packed Fresh Basil
- 13 cups Fresh Parsley
- 2 cloves Garlic, Sliced
- 1 teaspoon Salt
- 1/4 teaspoons Pepper
- 3 Tablespoons Extra Virgin Olive Oil
- Place beans, avocado, lemon juice, basil, and parsley into a food processor or blender and blend until just smooth.
- Add the rest of the ingredients and blend until desired consistency.
- Makes 2 cups.
- Keep refrigerated.
