Pumpkin pancakes
- 2 cup AP flour
- 1 1/2 cup milk
- 1/2 cup Brown Sugar
- 3/4 cup Granulated Sugar
- 3 2/3 tsp Baking Powder
- 3 Eggs
- 3/4 cup Veg. Oil
- 1 tsp vanilla extract
- 1 can Pumpkin puree (15 oz.)
- 2 1/2 tsp pumpkin pie spice
- Whisk dry ingredients - minus sugars
- Use large bowl, mix sugars with wet ingredients
- Slowly add dry mix to wet mix.
- Do not oversize, just until moistened
- Preheat griddle and grease (med-med.
- low heat)
- Pour batter and cook about 2 min on each side.
- Serve!
