Chickpea Salad Sandwiches

  1. Drain and rinse the chickpeas.
  2. Add all the ingredients (except bread) to a food processor and pulse a few times.
  3. If you dont have a food processor, first mash the chickpeas in a medium-sized bowl with a fork or potato masher, then add the remaining ingredients and mix well.
  4. If using a food processor, after pulsing, use a spatula to push the mixture down toward the bottom and pulse a few more times.
  5. You want the consistency to be a little chunky.
  6. Refrigerate until ready to serve on your favorite sandwich bread.
  7. Optional garnishes: salad greens, favorite cheese slices, tomato slices, avocado.
