Ice Cream and Berry Sponge
- 500 ml ice cream, softened, any flavour
- 1 sponge cake, double layer, unfilled
- 250 g berries, for decoration
- 60 g milk chocolate, grated, for decoration
- Soften ice cream in fridge for about 10 minutes.
- Place one layer of sponge on serving dish.
- Spread 2/3 of ice cream over this layer.
- Top with next layer of cake and then spread remaining ice cream over it.
- Decorate with an assortment of berries and chocolate.
- Cover with plastic wrap.
- Place in airtight container and freeze till needed.
