Hot Feta Artichoke Dip
- 1 (14 ounce) can artichokes, quarters drained
- 4 ounces feta cheese, crumbled
- 1 cup mayonnaise
- 12 cup parmesan cheese, shredded
- 1 (2 ounce) jar pimientos, diced
- 1 garlic clove, minced
- 2 tablespoons lemon juice
- 1 teaspoon white pepper
- 14 cup green onion, sliced
- 12 cup tomatoes, chopped
- Preheat oven to 350 degrees.
- Cut artichoke quarters in half.
- Mix all ingredients together except the green onions and tomatoes.
- Bake in an au gratin dish or shallow 3 cup oven safe dish for 20 to 25 minutes, or until golden brown.
- Remove from oven and let stand 5 minutes.
- Garnish with sliced onions and tomatoes.
- Serve with toasted pita triangles or baguette slices.
