Beefy Cornbread Casserole
- 1 pound Ground Beef
- 1 whole Onion, Chopped
- 3 whole Jalapeno Peppers, Chopped
- 1 package (8.5 Oz. Package) Cornbread Mix
- 3/4 teaspoons Salt
- 1/2 teaspoons Baking Soda
- 1 can (14 3/4 Oz. Can) Cream Style Corn
- 1 cup Milk
- 1/2 cups Vegetable Oil
- 2 whole Eggs, Beaten
- 3 cups Shredded Cheese, divided
- In a large skillet, cook the beef, onion and peppers over medium heat until the meat is no longer pink; drain and set aside.
- In a small bowl, combine the cornbread mix, salt, baking soda, corn, milk, oil and eggs.
- Pour half of the batter in a greased 9 x 13 baking dish.
- Layer half the cheese and all of the beef mixture.
- Top with remaining cheese.
- Carefully spread remaining batter over the top.
- Bake uncovered at 350 degrees for 40-45 minutes or until a toothpick comes out clean.
