Beefy Cornbread Casserole

  1. In a large skillet, cook the beef, onion and peppers over medium heat until the meat is no longer pink; drain and set aside.
  2. In a small bowl, combine the cornbread mix, salt, baking soda, corn, milk, oil and eggs.
  3. Pour half of the batter in a greased 9 x 13 baking dish.
  4. Layer half the cheese and all of the beef mixture.
  5. Top with remaining cheese.
  6. Carefully spread remaining batter over the top.
  7. Bake uncovered at 350 degrees for 40-45 minutes or until a toothpick comes out clean.
