Painted Salmon

  1. Start with a nice fillet of fresh salmon.
  2. Whatever size you get at the grocery store is suitable, I find a large fillet usually serves 4.
  3. Remove any obvious pin bones, rinse, and pat dry.
  4. Dont worry about the skin.
  5. Place your salmon in a large oven safe baking dish.
  6. A cookie sheet lined with foil makes for easy clean up.
  7. Salt and Pepper the salmon.
  8. Spread the salmon liberally with mayo, at least a cup for a large fillet.
  9. You want to frost it like a cake.
  10. Sprinkle the mayo frosted salmon with lots of dill, lemon pepper, and top off with 2-3 Tablespoons capers.
  11. Bake salmon in a 350 degree oven for 15-20 minutes depending on the thickness of the salmon.
  12. Salmon will be done when it flakes easily with a fork.
