Mahogany Glazed Chicken
- 1/2 c. brewed dark roast coffee
- 1/2 c. orange juice
- 2 Tbsp. honey
- 1 Tbsp. dark molasses
- 1 Tbsp. Dijon mustard
- 1 large clove garlic, minced
- 1 Tbsp. finely grated fresh ginger
- 1/4 tsp. ground cumin
- 1/4 tsp. crushed red pepper
- 1/4 tsp. cinnamon
- salt and pepper to taste
- 6 each of chicken thighs and breasts, skin removed
- In a saucepan, combine all the ingredients, except the chicken.
- Bring to a boil and cook about 4 minutes.
- Remove the pan from the heat.
- Place the chicken on a rack and baste with the mixture.
- Bake in a 375u0b0 oven for at least 45 minutes or until cooked.
- Baste every 10 minutes.
- Pour the remaining sauce over the chicken and serve.
- Serves 6.
