Spinach and Avocado Quesadilla with Creamy Chili Sauce
- 1 whole Tortilla Shell
- 1 slice Pepper Jack Cheese
- 1/2 whole Avocado
- 1 Tablespoon Cilantro, Chopped (optional)
- 1 Tablespoon Chunky Salsa
- 2 teaspoons Sour Cream
- 1/4 teaspoons Chili Powder
- 1/2 cups Baby Spinach
- Heat a skillet or cast iron grill top to medium heat.
- Lay the tortilla shell in the skillet, top with cheese and avocado slices.
- Heat until cheese is melted and the bottom of the tortilla shell is slightly brown.
- Meanwhile, in a small bowl, mix cilantro, salsa, sour cream, and chili powder in a bowl.
- Remove tortilla from heat, add spinach and creamy chili sauce, fold over and serve.
- Makes 1 serving.
