Pork Scallopini Recipe
- 1 pound pork tenderloin
- 1 egg, slightly beaten
- 1 tbsp. water
- 1/2 c. dry bread crumbs, finely crushed
- 1/4 teaspoon salt
- 1/4 teaspoon onion pwdr
- 1/8 teaspoon garlic pwdr
- 1/8 teaspoon pepper
- 2 tbsp. butter
- Cut pork diagonally into 1/2 inch slices.
- Mix egg and 1 Tbsp.
- water.
- Mix bread crumbs, salt, onion pwdr, garlic pwdr, and pepper.
- Toss pork with egg mix.
- Coat with crumb mix.
- Heat 2 Tbsp.
- butter in 12 inch skillet over medium heat till warm.
- Cook pork in butter about 8 min or possibly till done.
- Remove pork from skillet; keep hot.
