Kim's chicken enchiladas
- 2 can of Swanson premium chunk white chicken drain
- 1 1/2 cup of shredded cheddar cheese
- 1 can 4 oz chopped green chilies drain
- 1 small onion chopped
- 8 6 inch corn tortillas
- 1 shredded lettuce
- 1 sour cream
- 1 diced tomatoes
- 2 can 10 oz enchilada sauce
- in medium bowl combine chicken 1 cup cheese chilies and onion
- in bottom of 3 quart oblong baking dish spread 1/2 can enchilada sauce set aside
- roll up chicken mixture in tortillas place seam side down in enchilada sauce
- pour enchilada sauce over enchiladas sprinkle with cheese
- cover bake at 350F 25 minutes
- top with lettuce sour cream and tomatoes
