Chicken Drumsticks & Daikon Radish Simmered with Miso & Soy Sauce
- 10 Chicken wing drumettes - the large end of the wing
- 1/2 Daikon radish
- 400 ml Water
- 1 tsp Dashi stock granules
- 2 tbsp Sake
- 2 tbsp Sugar
- 2 tbsp Mirin
- 2 tbsp Soy sauce
- 1 tbsp Miso
- Pour the oil in the pan and start cooking the chicken drumsticks, skin side down.
- When they start to brown, flip and continue cooking.
- Add the daikon radish.
- Shake the pan to coat everything with the oil.
- Drizzle in the sake and add the water and dashi stock granules.
- Continue cooking.
- Skim off the scum.
- When the daikon radish is cooked through, add the sugar and mirin and simmer for 5 minutes (use medium-low heat).
- Put the lid on!
- Add the soy sauce and simmer for 10 minutes.
- Finally, add the miso and let it dissolve.
- When you're ready to eat it, heat it again and add daikon leaves for color (if you have them).
