Pineapple Coconut Cream Macadamia Nut Treats
- 2 cups Macadamia Nuts
- 1/2 cups Sweetened Coconut Flakes
- 16 ounces, weight Canned Crushed Pineapples (reserve Juices)
- 1 cup Cream Cheese, Softened
- 1 Tablespoon Dark Brown Sugar
- 1/4 teaspoons Pure Vanilla Extract
- 1/2 teaspoons Cinnamon
- 2 dashes Nutmeg
- 1 cup Cool Whip Topping
- Note: There is a 30 minute wait time involved with this recipe (included in prep time above).
- In a large resealable bag add macadamia nuts.
- Seal bag and use a rolling pin to crush into small pieces.
- Add sweetened coconut flakes, seal bag and shake to mix together.
- Spread the mixture onto a plate and set aside.
- In a mixing bowl add drained crushed pineapple and cream cheese and stir with a sturdy spatula to thoroughly incorporate.
- Add brown sugar, vanilla extract, cinnamon and nutmeg and stir again.
- Fold in Cool Whip topping.
- Cover with plastic wrap and refrigerate 30 minutes.
- Place reserves pineapple juice in an airtight jar or container for another use and put into the refrigerator.
- After the 30 minutes scoop (I use a teaspoon) some of the pineapple mixture into the palm of your hand and roll into bite size rounds (balls).
- Roll in the nut/coconut mixture to coat well.
- Place onto a platter.
- Repeat with remaining ingredients.
- Cover platter with plastic wrap and refrigerate until ready to serve or store in an airtight container in the refrigerator until ready to serve.
- These are great as an appetizer for a party or family gathering or just to snack on.
