Coffee and Chocolate Flip
- 1 egg, very fresh
- 1 12 tablespoons cognac
- 1 12 tablespoons Kahlua
- 1 teaspoon dark roast instant coffee granules
- 4 12 tablespoons heavy cream
- cocoa powder (to garnish)
- Separate the egg and beat the white until frothy and in another small bowl beat the egg yolk with the sugar.
- In a small pan combine the brandy, Kahlua, coffee and cream.
- Warm over a very low heat then allow the mixture to cool.
- When cool whisk this mixture into the egg yolk.
- Add the egg white and pour the mixture back and forth between two glasses until it is smooth.
- Pour into a tall glass over coarsely crushed ice and sprinkle the top with cocoa powder.
