Summertime Vegetarian Stir-Fry

  1. In a large skillet add olive oil and heat over medium heat.
  2. Add garlic, onions, zucchini and peppers.
  3. Cook until slightly tender, about 5 minutes.
  4. Add corn and basil, cook until tender about 5 more minutes.
  5. Stir in tomatoes and parsley and cook until just warmed.
  6. Divide rice and vegetables between 4 plates.
