Cheesecake-Style Mousse Made with Yogurt

  1. Strain the yogurt: Place a sieve on top of a bowl, and spread paper towels.
  2. Pour the yogurt on top.
  3. Chill in the fridge overnight.
  4. It is good to go once it has become about 200g.
  5. Preparation: Increase the amount of gelatin by adding in 2 tablespoons of water (not listed).
  6. Wash the fruit, and cut into small pieces.
  7. Cookie crust: PLace the cookies into a plastic bag, and crush with a rolling pin.
  8. Melt butter in a microwave, and mix into the cookies.
  9. Firmly pack the cookies into the bottom of the mold.
  10. Cook for 8 ~ 9 minutes in an oven preheated to 355F/180C, and let cool.
  11. Add sugar to the heavy cream, and whip until it forms soft peaks.
  12. Add yogurt from Step 2 at this point, and mix.
  13. Dissolve the gelatin from Step 3 by microwaving for 20 seconds.
  14. Add the gelatin and fruit to Step 6 in order, and stir well.
  15. Pour it into the mold with the cookie crust, and let cool in the fridge for 2 hours.
  16. It is done .
